In Views, you have the choice of using entity fields or display the rendered entity (and pick a view mode). In most cases, I choose rendered entity. This allows me to reuse the display (in a block or another view), and manage it all via the entity display settings.
For a view that is a quick one off, or displays a table, I would use fields. Especially one that I know doesn't need to be reused.
